Instructions:

1. Start by combining 2 tablespoons of butter with 1 tablespoon of Dijon mustard in a small pot. Once you mix it well, you can leave it on the side and get a non-stick pan.

2. Put it over medium heat and melt 2 tablespoons of butter in it. This has to be mixed and stirred with the flour to make a paste.

3. When you have that, start adding milk gradually while whisking. This is crucial to avoid forming lumps that will ruin the brunch.

4. Once you have a thick paste, reduce the heat to low and stir in gruyere. The seasoning should consist of salt, white pepper, and nutmeg. When you are ready with the seasoning, remove the paste from the heat.

5. Now you have to toast some crumpets in a toaster or grill and spread the Dijon butter mix you made on them. You don’t have to use all of the mix. Put some ham on top of that and spread the bechamel sauce. Then add Parmesan and place your brunch creations on the grill until they get golden and bubbly.

6. Meanwhile, you should get to making the eggs. Get a pan and melt one tablespoon of butter over medium heat. Crack the eggs and fry them to the texture you prefer before seasoning them with salt and pepper. Use the eggs to top your ready crumpets and serve!
